Simple, Healthy Fall Recipe…need I say more!

simple healthy fall recipeMy FAVORITE thing about fall – SPAGHETTI SQUASH! Ok, it’s second to Pumpkin. But I could eat this simple, healthy , easy fall recipe once a week all fall and winter.

The criteria for me to pass on any healthy recipes or food suggestions to all of you is – It has to have interesting flavors AND it has to be super simple to make.

If you are looking for a really good food blogger I would suggest you check out A Wild Cherry in the Kitchen…and she shows you beer porn (yes, I said beer porn!). As I always say, I am not a food blogger and don’t do justice to those who are.

Here is my super simple, healthy, flavorful fall meal. And it doubles as a Meatless Monday meal! AND it is great as left-overs or pack as your lunch the next day.

Visit your Farmers Market and pick up the following fresh ingredients: Medium size Spaghetti Squash, 1/2 dozen (or more) Roma Tomatoes, head of Garlic, Fresh Basil (I suggest you grow your own so that you always have it on hand). Then drop by the grocery store and get Pine Nuts and some Feta (or really good Parm like Parmigiano Reggiano).

Use a knife to poke some holes in the squash and microwave it for 6-7 minutes. While that’s cooking heat 1T of Olive Oil in a small skillet on medium high heat and toast the Pine Nuts – be careful, they cook quickly so stir them and remove them from the heat when they look toasted. Next dice up your tomatoes and crush a couple cloves of garlic. In a larger skillet heat another 1T of Olive Oil  on high, dump in the tomatoes and garlic, stir them up and cook them just a few minutes until the tomatoes soften and the smell is amazing. Add a pinch a salt and turn the heat down to low.

By now your squash is ready -you know it’s ready if it’s squishy. Take it out of the microwave and cut it in half. Scoop the insides of the squash into a medium sized bowl. It will fall apart and look just like spaghetti! Then simply pour your fresh garlic tomato sauce on top, sprinkle with the toasted pine nuts and some feta cheese. Lastly cut the basil into pretty little strips and decorate the top with the beautiful green ribbons.  Voila’ – A delicious meatless meal! Of course if you enjoy a little meat with your meal grilled chicken is the perfect choice.
